Mathieu, Sagan meant the "we are made of sour-stuff" bit literally. The cosmos knowing itself makes no sense if taken literally, other than the trivial interpretation that since we are part of the cosmos and we know ourselves, then "the cosmos" knows itself. But "the cosmos" here is not the universe at large, panpsychism style, it's just us.
